Carrot Cake

Carrot Cake

Ingredients

  • 1 tbsp coconut flour

  • 1 tbsp almond flour

  • 1 tbsp oat flour

  • 2 tbsp coconut sugar

  • ½ tsp baking powder

  • Pinch of cinnamon

  • 1 egg white

  • 2 tbsp mashed carrots

  • 1 tbsp shredded carrots

  • 1 tbsp almond milk

Directions

  • Preheat oven to 350 F. Grease a loaf pan.

  • Whisk together all flours, sugar, baking powder and cinnamon.

  • In a separate bowl combine egg white, carrots and milk.

  • Add to dry ingredients.

  • Pour into a loaf pan and bake 12 minutes until a toothpick inserted in the centre comes out clean.
