Cauliflower Bell Pepper Soup

• 2 large peppers stemmed and cored, halved lengthwise
•4 tsp oil
•1 tsp salt
•¼ tsp cayenne pepper
•4 cups chicken broth
•4 cups cauliflower
•1 tsp sweetener
•Preheat broiler to high.
•Arrange peppers skin side up on baking sheet. Broil until skins are blackened (ten minutes).
•Remove and let cool. Peel over a bowl to collect juices and set aside
•Heat oil over medium high heat. Add shallots, salt and cayenne – cook three minutes.
•Add broth and cauliflower. Bring to a boil then lower to a simmer. Cover and cook twenty minutes
•Add peppers with juices and cook covered for ten minutes.
•Add sweetener and pepper to taste.
