Cauliflower Shepherds Pie


  • 1 small head cauliflower

  • 2 tbsp milk

  • 2 tbsp + 2 tbsp oil

  • 10 oz. ground beef

  • ½ red peppers, diced

  • ½ cup leeks, diced

  • 1 clove garlic, minced

  • 1 lemon, juiced

  • 1 tsp stevia

  • 1 tsp oregano

  • ½ tsp dried dill

  • 1 tbsp parsley, chopped

  • Salt and pepper to taste


  • Rinse the cauliflower, cut into florets

  • Fill a pot with salty water and bring to a boil

  • Add the cauliflower and cook for 20 minutes until tender

  • Drain, and place back in the pot. Add milk, oil and salt to taste. Puree with an immersion blender and set aside

  • Heat the oil in a large skilled and sauté the peppers, leek and garlic. Add the beef and cook until brown.

  • Pour in the lemon juice. Add the stevia, oregano, dill, and parsley. Add salt and pepper to taste. Cook until almost all the liquid evaporates.

  • Place the meet in an oven safe dish. Cover with cauliflower puree and bake at 350°F 30-40 minutes.
