Chicken Zucchini Poppers

Ingredients

  • 1lb ground chicken

  • ½ tsp pepper

  • 1 tsp salt

  • 3 tbsp cilantro, minced

  • 1 clove garlic, minced

  • 2 green onions, sliced

  • 2 cups zucchini, grated and drained

  • ¾ tsp cumin

Directions

  • Preheat oven to 400F. Line a baking sheet with parchment paper

  • Mix all ingredients together until well combined.

  • Use a small spoon to scoop mixture out to desired size and gently shape with hands. Place on baking sheet

  • Bake 15-20 minutes, flipping once halfway.
