Chicken and Tuscan Kale Salad

Ingredients

1 lb skinless, boneless chicken breasts

2 tbsp apple cider vinegar

2 sprigs fresh thyme

2 cloves garlic, halved

2 bay leaves

6 peppercorns

1 tsp salt

1 head tuscan kale, stemmed and thinly sliced

1 red bell pepper cut into matchsticks
Directions

Add 4 cups water, cider vinegar, thyme, garlic, bay leaves, peppercorn and salt to a medium saucepan set over medium heat. Bring to a simmer. Simmer for 5 minutes. Reduce heat to low until barely simmering.

Add chicken breasts; gently poach for 12 to 15 minutes or until just cooked through. Remove chicken from packing liquid.

Cool chicken completely and shred. Place kale and peppers in a large bowl and toss with IP honey-dijon dressing. Stir in chicken.
