Chocolate Cherry Protein Muffins

Ingredients

¼ cup coconut flour

¼ cup cacao powder

½ tsp baking powder

1 packet Ideal Complete Meal Replacement Chocolate Drink Mix

¼ tsp salt
-
¼ cup honey
-
½ cup whole fat coconut milk (canned)

¼ cup coconut oil, melted
-
3 eggs
-
1 tbsp vanilla extract
-
¼ cup cherries, quartered
Directions

Preheat the oven to 325°F. Line muffin tins

Mix the flour, cacao, baking powder, protein powder and salt.

Add the honey, milk, oil, eggs and vanilla extract. If the batter is too dry add 1 tbsp coconut milk at a time until it is moist.

Gently fold in the cherries
-
Spoon the batter into the tins to 2/3 full

Bake 20-25 minutes
