Eggplant and Hummus Burgers

Ingredients

  • 1 medium sweet potato, cooked, skin removed

  • 1 15 oz can cannellini or white kidney beans, rinsed

  • 1-2 cloves garlic

  • 3 tbsp tahini

  • 2-3 chipotle peppers in adobo

  • 1 tbsp cumin

  • 1 tsp paprika

  • 1 tsp salt

  • 2 tbsp lemon juice

  • 1 small eggplant, sliced in ¼” thick slices

  • Burger toppings as desired

Directions

  • Combine all hummus ingredients in a blender and process until smooth and creamy

  • Sprinkle eggplant slices with salt and let sit 5 minutes. With a paper towel dab off any excess moisture. Grill until cooked.

  • Create your burger. Smother a generous helping of hummus as your source of protein
