Ingredients

1 can chickpeas, rinsed (15 oz)

1 clove garlic

¼ cup olive oil

2 tbsp fresh lemon juice

2 tbsp tahini (optional)

1 tsp ground cumin

Kosher salt

½ cup roasted vegetable (red pepper, beet, artichoke etc.)
Directions

In a food processor, puree the chickpeas and garlic with olive oil, lemon juice, tahini, cumin, ¾ tsp salt and roasted vegetable of your choice.

Add 1 to 2 tbsp tablespoons water as necessary to achieve the desired consistency

Transfer to a bowl. Drizzle with olive oil and sprinkle with paprika before serving.
