Ingredients

  • 1 can chickpeas, rinsed (15 oz)

  • 1 clove garlic

  • ¼ cup olive oil

  • 2 tbsp fresh lemon juice

  • 2 tbsp tahini (optional)

  • 1 tsp ground cumin

  • Kosher salt

  • ½ cup roasted vegetable (red pepper, beet, artichoke etc.)

Directions

  • In a food processor, puree the chickpeas and garlic with olive oil, lemon juice, tahini, cumin, ¾ tsp salt and roasted vegetable of your choice.

  • Add 1 to 2 tbsp tablespoons water as necessary to achieve the desired consistency

  • Transfer to a bowl. Drizzle with olive oil and sprinkle with paprika before serving.
