Lemon Dill Chicken

Ingredients

3 cloves garlic, minced

¼ cup onion, diced

2 tbsp dill, minced

1 tbsp fresh lemon juice

1 cup chicken broth

2 tsp flour

4 boneless, skinless chicken breast

Olive oil

Salt and pepper

1 cup asparagus, steamed

1 cup Yukon gold potatoes
Directions

Season chicken breast with salt and pepper.

Heat 1 tbsp oil in a large pan over medium heat.

Season chicken with salt and pepper. Sear, 3 minutes per side. Remove from pan and place in a baking dish.

Add garlic and onion to the pan. Cook, stirring 2 minutes

Whisk together dill, lemon juice, broth and starch and add to pan. Cook approximately 3 minutes until thickened. Pour over chicken and bake 10-15 minutes.

In a medium pot, boil 2 cups of water. Add the diced potatoes and let cook until tender, approximately 7 minutes. Drain.

Mash or whisk with 1-2 tsp olive oil until your preferred consistency is reached.
