No Bake Carrot Bites

Ingredients

1 ½ cups grated carrots
-
½ cup raw almonds
-
½ cup raw walnuts
-
1 ½ cups dates, pitted

1 tbsp maple syrup
-
¾ cups shredded coconut
-
1 tsp cinnamon
-
½ tsp ground ginger
-
1/8 tsp cardamom
-
Pinch of salt.
Optional Icing:
-
13 ½ oz full fat coconut milk, refrigerated over night and water removed.

½ tsp vanilla
-
6 drops liquid sweetener (Stevia or honey)
Directions

Line 12 cupcake tins
-
Grind almonds and walnuts in a food processor to a flour.

Add coconut and spices. Pulse 10 seconds.

Add carrots, dates and syrup until dates are well chopped
-
Place 2-3 tbsp of mixture into each cupcake tin. Freeze 1 hour
-
Beat coconut milk with vanilla and sweetener until light and fluffy. Ladle a dollop on each Carrot Bite.
