Oatmeal Zucchini Muffins
Ideal Protein Phase:
•1 package Ideal Protein maple oatmeal
•1 egg – beaten
•½ tsp baking powder
•pinch of salt
•1 tsp Stevia/Splenda
•1 ½ tsp cinnamon
•½ - ¾ small zucchini finely grated
•2/3 ounces water
•Preheat oven to 385°F Line muffin tin
•Squeeze out excess juice from grated zucchini
•Mix the egg, Ideal Protein maple oatmeal, baking powder, slat, Stevia, cinnamon and zucchini.
•Gradually add water until a batter forms.
•Fill each cup two thirds full with batter
•Bake 20 minutes
