Pickerel in Sweet and Sour Sauce
Ideal Protein Phase:
Fish and Seafood
•2 lbs pickerel
•2 cups fish stock
•4 cups Chinese cabbage, finely sliced
•1 cup peppers, finely sliced
•1 cup green onions, finely sliced
•1 tbsp sesame oil
•2 tbsp garlic, crushed
•2 tbsp fresh ginger, finely sliced
•2 tbsp Walden farms honey BBQ sauce
•2 tbsp Walden farms ketchup
•4 tbsp cider vinegar
•sea salt and pepper to taste
•Sauté peppers and green onions in sesame oil. Add cabbage and cook until vegetables are tender. Remove vegetables and set aside.
•Using the same pan, bring ketchup and BBQ sauce to a boil. Add vinegar and boil until the sauce reduces to four tablespoons. Add fish stock and ginger and simmer for five minutes.
•Add fish and simmer until cooked.
•Remove fish and reheat the vegetables in this sauce. If the sauce is too thick add water accordingly. Adjust the seasoning.
•Serve fish on top of vegetables with sauce drizzled on and around.
