Pink Radish Soup

Pink Radish Soup

Ingredients

  •  2 tbsp extra virgin olive oil, divided

  •  2 green onions, sliced thin and divided

  •  pinch sea salt

  •  pinch ground pepper

  •  2 cups radishes, sliced

  •  1/2 rutabaga, stripes

  •  1 beet, peeled and sliced 1/4-inch thick

  •  4 sage leaves, preferably fresh

  •  1 quart vegetable broth

Directions

  • Heat a soup pot over medium heat with olive oil

  • Add ⅔ of the green onions, salt and pepper. Cook 4 minutes

  • Add radishes and cook 7-10 minutes

  • Add beet slices, rutabaga and sage leaves. Stir to combine.

  • Slowly pour in broth and bring to a boil.

  • Reduce to a simmer and let cook 20 minutes.

  • Remove sage leaves and discard. Puree soup in a blender until smooth.

  • Sauté remaining green onions until golden and crispy for a garnish.
