Pumpkin Soup

Ingredients

•1 package Ideal Protein chicken soup

•1 ½ tsp pumpkin pie spice

•6 ounces water

•¼ tsp sea salt

•¼ tsp fresh parsley

•½ tsp fresh thyme

•½ garlic clove, minced

•1 ounce skim milk

•1 cup of shallot

•1 cup yellow zucchini (summer squash) cut in cubes and steamed

•1 pinch black pepper

Directions

•Mix the soup, pumpkin pie spice, water, salt, parsley, thyme and garlic in a shaker cup.

•Pour the mixture in a pot and bring to a boil

•Add the shallots, zucchini and milk. Simmer four minutes

•Puree the soup with an immersion blender.

•Season to taste and garnish with chives and basil
