Roasted Veggie and Shrimp Salad

Ingredients

  • 2 cups roasting veggies

  • (asparagus, zucchini, turnip,

  •  tomatoes, peppers etc.)

  • 8 oz shrimp

  • Olive oil

  • 1 lime juice, + 3 tbsp

  • Chili Powder

  • Oregano

  • Salt

  • Pepper

  • Stevia

Directions

  • Preheat oven to 400°F

  • Lay veggies out on a baking sheet lined with parchment paper. Drizzle with olive oil, and sprinkle with chili powder, oregano, salt and pepper. Roast 1o minutes

  • Remove from oven and spread to sides of baking dish, leaving a space in the middle large enough to place all your shrimp. Drizzle with oil and juice of one lime. Sprinkle with chili powder, oregano, salt and pepper. Bake 5 -8 minutes

  • Combine 2 tbsp olive oil, 3 tbsp lime, 1 tbsp stevia, ½ tsp chili powder, salt and pepper.

  • Place veggies and shrimp on a bed of mixed greens, drizzle salad dressing over everything and toss to combine!
