Roasted Veggie and Shrimp Salad

2 cups roasting veggies

(asparagus, zucchini, turnip,

tomatoes, peppers etc.)

8 oz shrimp

Olive oil
-
1 lime juice, + 3 tbsp

Chili Powder
-
Oregano
-
Salt
-
Pepper
-
Stevia
Directions

Preheat oven to 400°F

Lay veggies out on a baking sheet lined with parchment paper. Drizzle with olive oil, and sprinkle with chili powder, oregano, salt and pepper. Roast 1o minutes

Remove from oven and spread to sides of baking dish, leaving a space in the middle large enough to place all your shrimp. Drizzle with oil and juice of one lime. Sprinkle with chili powder, oregano, salt and pepper. Bake 5 -8 minutes

Combine 2 tbsp olive oil, 3 tbsp lime, 1 tbsp stevia, ½ tsp chili powder, salt and pepper.

Place veggies and shrimp on a bed of mixed greens, drizzle salad dressing over everything and toss to combine!
