Spicy Chicken Salad

Ingredients

  • 2 tsp paprika

  • 1 tsp cayenne

  • 1 tsp garlic

  • 1 tsp oregano

  • 1 tsp thyme

  • 1 tsp salt

  • ¼ cup Greek yogurt

  • ¼ tsp garlic

  • 2 tbsp. lime juice

  • 1 tbsp. oil

  • 2 cups romaine lettuce

  • ¼ cup cherry tomatoes

  • ¼ cup cucumber diced

  • ¼ cup red onion, sliced thin

  • 1 avocado diced

Directions

  • Preheat oven to 375°F

  • Mix together paprika, cayenne, garlic, oregano, thyme and salt. Reserve 1 ½ tsp.

  • Coat chicken in spice mix. Sear 2 minutes each side. Place in oven and cook 15-20 minutes. Let cool and slice thin.

  • Combine Greek yogurt, garlic, lime juice, oil and reserved seasoning.

  • Toss together lettuce, cherry tomatoes, cucumber, red onion, avocado, chicken and salad dressing.
