Spinach Quiche

Ingredients

½ cup butter

2 eggs

¼ tsp salt

¾ cup coconut flour

6 eggs

1 ½ cups heavy cream

1 cup diced ham
-
¼ cup diced red onion
-
¼ cup spinach, chopped

1 cup shredded cheddar
-
Salt/pepper
Directions

Preheat oven to 400°F
-
In a medium bowl, beat the butter, eggs and salt with a fork.

Add the coconut flour and mix well until there are no clumps
-
Gather the dough in a ball, then pat into a 9 inch greased pie pan, or individual muffin tins

Prick dough with a fork several times

Bake 9 minutes. Let cool.

In a small pan sauté onions, ham and spinach five minutes. Put into pie shell and sprinkle with cheddar cheese

Beat eggs with cream until well blended. Add salt and pepper. Pour into shell.

Bake 35-45 minutes until set (middle should not jiggle)
