Squash and Garbanzo Bean Curry

Ingredients

1-2 cloves garlic, minced

1 tsp ground ginger

1 tsp ground cumin
-
1 ½ tsp turmeric
-
½ cup veggie stock
-
1 carrot, grated
-
1 zucchini, grated
-
7 oz squash, cut into small pieces

1 can chopped tomatoes
-
1 can garbanzo beans, rinsed

1.8 oz raisins
Directions

Combine garlic, ginger, spices and a little stock in a large pot over medium heat.

Add carrots, zucchini and squash. Stir until well combined
-
Add tomatoes, stick, beans and raisins.

Cover and simmer 10 minutes.

Add spinach and remove mixture from heat.
