Tofu Stuffed Peppers

Tofu Stuffed Peppers


  • 5 Small peppers, tops cut off and seeds removed

  • 3 cups swiss chard, chopped

  • 8 oz firm tofu, crumbled

  • 2 tomatoes diced

  • 1 cup frozen peas

  • 1 cup chickpeas, rinsed

  • 4 tbsp hot water

  • 4 tbsp tomato paste

  • 2 cloves garlic, crushed

  • 2 tbsp soy sauce

  • 1 tbsp miso paste

  • 1 tsp curry


  • Preheat oven to 350°F

  • Stir miso paste into hot water until dissolved.

  • Combines garlic and tofu in a frying pan over medium heat until tofu just begins to cook

  • Add tomatoes, swiss chard, curry powder and miso paste. Stir frequently.

  • Add tomato paste, soy sauce, peas and chickpeas. Cook on low heat until swiss chard is cooked.

  • Spoon into peppers and place lid on top.

  • Bake until pepper is charred in spots, approximately 15-20 minutes.
