Turkey Taco Salad

Turkey Taco Salad

Ingredients

•8oz lean ground turkey

•2 tbsp taco seasoning (low sodium)

•pinch of salt

•1 ½ cups baby spinach and/or kale

•¼ cup cilantro, chopped

•¼ cup red onion sliced

•⅓ cup prepared tomatillo salsa “dressing” or low carb red salsa

•small dash of grape seed oil

•wedge of lime

Directions

•In a frying pan, heat the grape seed oil over medium heat

•Add the ground turkey, taco seasoning and pinch of salt. Mix well.

•Cook the meat until brown, stirring occasionally. Add cilantro.

•Assemble baby spinach on a plate. Top with turkey mixture, tomatillo salsa and red onion.

•Add a squeeze of lime.
