Vanilla Protein Buckwheat Waffles

Ingredients

  • 1 cup buckwheat flour

  • 1 tbsp sugar

  • 1 ¼ tsp baking powder

  • 1 tsp baking soda

  • ¼ tsp salt

  • ¼ tsp cinnamon

  • 1 packet Ideal Complete Meal Replacement Vanilla Drink Mix

  • 1 ¼ cup buttermilk, shaken

  • ¼ cup melted butter or coconut oil

  • 1 large egg

Directions

  • Preheat waffle iron

  • In a medium bowl, sift the flour, sugar, baking powder, baking soda, salt, cinnamon and protein powder.  Set aside

  • Whisk together the buttermilk, melted butter and egg. Pour the wet mixture into the dry mixture and stir together until there are only a few small lumps remaining. Let sit 5-10 minutes

  • Pour batter into hot waffle plates and cook as per your machine. Alternatively you can make pancakes with this recipe.
