Zucchini Noodle Pad Thai

Ingredients

8 oz. shrimp, peeled and deveined

8 oz. chicken, cut in 2 inch strips

1 packet Ideal Protein BBQ Soy Nuts

1 tbsp calorie free fish sauce
-
1 tbsp white vinegar
-
2 limes, juiced
-
Salt and red pepper flakes to taste

4 eggs
-
½ cup scallions, chopped
-
2 cloves garlic, chopped
-
3 cups nappa cabbage, shredded

1 cup bean sprouts
-
1 ½ cups zucchini noodles
-
¼ cup fresh cilantro, chopped

4 tsp olive oil
-
1 tsp Splenda
Directions

Heat oil in a large pan over medium heat. Add garlic, chicken, shrimp and cilantro until chicken is mostly cooked and shrimp is pink.

Stir in scallions, bean sprouts, fish sauce and white vinegar

Add cabbage and stir fry one minute. Push all food to one side and add eggs. Stir until fully cooked, then stir all ingredients together.

Add zucchini noodles and stir one minute.

Add in lime juice while stirring continuously.

Add in salt, red pepper and Splenda.

Lightly chop soy nuts and sprinkle over top.
