Apple Cider Vinegar and Cucumber Salad


  • 4 cucumbers, sliced

  • ½ tsp sugar substitute

  • 1 tsp fresh basil

  • ¼ cup olive oil

  • 2 tbsp red onion, finely chopped

  • ¼ cup apple cider vinegar

  • ½ tsp celery seed

  • Sea salt and pepper, to taste


  • Place cucumbers in a large bowl. Pour oil and vinegar over and toss to coat before chilling, 1 hour.

  • Toss in remaining ingredients.
