Banana Bread

Banana Bread


  • 4 very ripe bananas

  • 5 eggs

  • 1 tsp baking soda

  • 2 tsp cinnamon

  • 1 tsp vanilla extract

  • ¼ tsp sea salt

  • ¾ cup coconut flour


  • Preheat oven to 350°F

  • Mash bananas with a fork. Add eggs and whisk to combine.

  • Mix in salt, baking soda, vanilla extract and cinnamon.

  • Add coconut flour and stir to combine. If needed, thin batter slightly with coconut oil.

  • Pour into a lined baking dish. Bake 40 minutes.
