Breakfast Stuffed Peppers

Ingredients

1 pepper cut in half lengthwise, seeds removed

2 eggs
-
½ cup mushrooms, sliced
-
½ cup spinach, chopped
-
Herbs and spices to taste
Directions
-
Preheat oven to 350°F
-
Lay peppers on a baking sheet face up and bake 10 minutes
-
Crack one egg into each half pepper. Add mushrooms, spinach and any herbs or spices you desire.

Bake 10 minutes
-
If on Phase 3 or 4 sprinkle some mozzarella or Swiss Cheese over-top with 3 minutes left in baking.
