Breakfast Stuffed Peppers

Breakfast Stuffed Peppers


  • 1 pepper cut in half lengthwise, seeds removed

  • 2 eggs

  • ½ cup mushrooms, sliced

  • ½ cup spinach, chopped

  • Herbs and spices to taste


  • Preheat oven to 350°F

  • Lay peppers on a baking sheet face up and bake 10 minutes

  • Crack one egg into each half pepper. Add mushrooms, spinach and any herbs or spices you desire.

  • Bake 10 minutes

  • If on Phase 3 or 4 sprinkle some mozzarella or Swiss Cheese over-top with 3 minutes left in baking.
