Buffalo Chicken Meatballs

Buffalo Chicken Meatballs


•2 lbs ground chicken breast

•½ cup finely grated zucchini

•½ cup grated celery

•½ cup grated onion

•1 tsp garlic powder

•1 ¼ tsp sea salt

•3 egg whites, beaten

•olive oil cooking spray

•1 cup hot sauce


•Preheat oven to 400°F

•Toss together zucchini, most of lemon juice and salt. Place cook in frying pan until tender-crisp.

•Mid way through cooking add in the spices, sweetener and vanilla.

•Spray glass pie pan with cooking spray.

•Lay down the zucchini pieces like a pie. Drizzle over top leftover lemon juice.

•Bake for 15-30 minutes until done.
