Butternut Squash and Quinoa Salad


  • 3 cups squash, cubed

  • 1tbsp oil

  • 1 cup quinoa, uncooked

  • 1 ½ cups water

  • 1/3 cup dried cranberries

  • 1/3 cup red onion, finely minced

  • 3 tbsp toasted pumpkin seeds

  • Salt and pepper


  • ½ cup oil

  • ¼ cup balsamic vinegar

  • 1 tsp honey

  • 1 tsp Dijon

  • 1 clove garlic, minced

  • Salt and pepper


  • Preheat oven to 400°F

  • Toss squash with oil, salt and pepper. Place on baking tray and roast 25 minutes.

  • Rinse quinoa and put in saucepan with water. Bring to a boil and reduce to a simmer. Let cook approximately 20 minutes until tender.

  • Toss all ingredients together. Chill 2 hours

  • Whisk together dressing ingredients and drizzle over salad just before serving.
