Butternut Squash Mac n Cheese

Butternut Squash Mac n Cheese


  • 1 cup roasted squash

  • 1 tbsp olive oil

  • 1 tbsp tapioca starch

  • ¾ cups milk

  • 2 tsp Dijon

  • 2 tsp garlic

  • ½ tsp onion powder

  • 2 tbsp lemon juice

  • 2/3 tsp salt

  • Pepper to taste

  • 2 cups macaroni


  • In a medium pot bring 2 cups water to a boil. Add macaroni and cook to Al Dente

  • Add all other ingredients together in a blender and mix until smooth. Toss with macaroni.
