Cauliflower Hummus

Cauliflower Hummus


  • 2 cups cauliflower

  • 1 cup fat free chicken broth

  • ½ lemon, juiced

  • 1 tsp za’tar spice blend

  • 1 tbsp roasted garlic

  • Salt and pepper to taste

  • 2 tsp olive oil

  • 1 pinch of rosemary

  • Hot chilis to taste


  • Combine stock and cauliflower in a small pot and bring to a boil.

  • Reduce to a simmer, covered, until the cauliflower is tender

  • Drain the cauliflower and reserve the broth for later

  • Place cauliflower, lemon juice, olive oil, garlic and spices to a blender or food processor

  • Blend, gradually adding the stock until a smooth consistency is reached.

  • Adjust spices.
