Cauliflower Hummus

Ingredients

2 cups cauliflower
-
1 cup fat free chicken broth
-
½ lemon, juiced
-
1 tsp za’tar spice blend
-
1 tbsp roasted garlic
-
Salt and pepper to taste

2 tsp olive oil
-
1 pinch of rosemary
-
Hot chilis to taste
Directions

Combine stock and cauliflower in a small pot and bring to a boil.

Reduce to a simmer, covered, until the cauliflower is tender
-
Drain the cauliflower and reserve the broth for later
-
Place cauliflower, lemon juice, olive oil, garlic and spices to a blender or food processor
-
Blend, gradually adding the stock until a smooth consistency is reached.

Adjust spices.
