Cauliflower Rice

Cauliflower Rice

Ingredients

  • ½ cup head cauliflower, grated

  • 3 green onions, diced

  • 1 clove garlic, minced

  • ½ tsp ginger

  • 3 tbsp soy sauce

  • 1 bell pepper diced

  • 1 jalapeno pepper diced

  • 3 eggs beaten

  • olive oil

  • 8 oz. chicken/shrimp

Directions

  • Heat 2 tbsp olive oil in a skillet over medium heat.

  • Cook chicken or shrimp until just done and set aside

  • In the same pan cook the white bits of the green onion, garlic, pepper and jalapeno pepper 1 minute.

  • Add cauliflower and cook for 4-5 minutes, stirring continuously

  • Add ginger, soy sauce, green bits of onion, and the cooked chicken or shrimp.

  • Stir to mix well until light brown.

  • Push mixture to one side and scramble eggs in the empty section until just done.

  • Combine all ingredients.
