Cauliflower Rice

Ingredients

½ cup head cauliflower, grated

3 green onions, diced
-
1 clove garlic, minced
-
½ tsp ginger
-
3 tbsp soy sauce
-
1 bell pepper diced
-
1 jalapeno pepper diced
-
3 eggs beaten
-
olive oil
-
8 oz. chicken/shrimp
Directions

Heat 2 tbsp olive oil in a skillet over medium heat.

Cook chicken or shrimp until just done and set aside

In the same pan cook the white bits of the green onion, garlic, pepper and jalapeno pepper 1 minute.

Add cauliflower and cook for 4-5 minutes, stirring continuously

Add ginger, soy sauce, green bits of onion, and the cooked chicken or shrimp.

Stir to mix well until light brown.

Push mixture to one side and scramble eggs in the empty section until just done.

Combine all ingredients.
