Chicken and Tuscan Kale Salad

Chicken and Tuscan Kale Salad


  • 1 lb skinless, boneless chicken breasts

  • 2 tbsp apple cider vinegar

  • 2 sprigs fresh thyme

  • 2 cloves garlic, halved

  • 2 bay leaves

  • 6 peppercorns

  • 1 tsp salt

  • 1 head tuscan kale, stemmed and thinly sliced

  • 1  red bell pepper cut into matchsticks


  • Add 4 cups water, cider vinegar, thyme, garlic, bay leaves, peppercorn and salt to a medium saucepan set over medium heat. Bring to a simmer. Simmer for 5 minutes. Reduce heat to low until barely simmering.

  • Add chicken breasts; gently poach for 12 to 15 minutes or until just cooked through. Remove chicken from packing liquid.

  • Cool chicken completely and shred. Place kale and peppers in a large bowl and toss with IP honey-dijon dressing. Stir in chicken.
