Chocolate Cherry Protein Muffins

Chocolate Cherry Protein Muffins


  • ¼ cup coconut flour

  • ¼ cup cacao powder

  • ½ tsp baking powder

  • 1 packet Ideal Complete Meal Replacement Chocolate Drink Mix

  • ¼ tsp salt

  • ¼ cup honey

  • ½ cup whole fat coconut milk (canned)

  • ¼ cup coconut oil, melted

  • 3 eggs

  • 1 tbsp vanilla extract

  • ¼ cup cherries, quartered


  • Preheat the oven to 325°F. Line muffin tins

  • Mix the flour, cacao, baking powder, protein powder and salt.

  • Add the honey, milk, oil, eggs and vanilla extract. If the batter is too dry add 1 tbsp coconut milk at a time until it is moist.

  • Gently fold in the cherries

  • Spoon the batter into the tins to 2/3 full

  • Bake 20-25 minutes
