Corned Beef

Corned Beef


  • 1lb beef brisket

  • 1 tsp peppercorns

  • 1 bay leaf

  • 4 whole cloves

  • ½ tsp cinnamon

  • 1 tsp coriander seeds

  • 3 juniper berries

  • 2 tbsp salt

  • 1 tsp stevia

  • 4 cups water

  • 1 tsp Ideal Protein Maple Syrup

  • 1 tsp peppercorns


  • Pour the water into a pot, and add peppercorns, bay leaf, cloves, cinnamon, coriander seeds, juniper berries, salt and stevia.

  • Bring to a boil and cook until the salt and stevia dissolve. Remove from the heat and let cool

  • When the brine is lukewarm, place the beef inside. Cover the pot with a lid and refrigerate for at least 4-5 days, flipping the meat once a day.

  • Take the meat out of the brine and rinse well. Brush the top with 1 tsp syrup and sprinkle with peppercorns

  • Wrap in aluminum foil and bake 2-2 ½ hours at 400°F
