Greek Pasta Salad


  • 1 package Ideal Protein Rotini

  • 1 cucumber, diced

  • 4 cherry tomatoes, halved

  • 1 bell pepper pepper, diced

  • 1 red onion, diced

  • 1 tbsp olive oil

  • 1 tsp apple cider vinegar

  • 1 clove garlic, minced

  • 1 tsp basil

  • 1 tsp oregano

  • 1 tsp lemon juice

  • ½ tsp dijon mustard


  • Cook rotini according to the directions on the package

  • Whisk together the oil, vinegar, garlic, basil, oregano, lemon juice and mustard.

  • Toss all ingredients together and serve.
