Ingredients

1 cup bell pepper, chopped

1 cup green onions, chopped

1 cup celery, chopped

1 tbsp minced garlic

1-2 tbsp olive oil
-
2 cups okra
-
1 ½ cups tomatoes and chiles

1 ½ cup diced tomatoes

16 oz diced chicken breast
-
8 oz lean turkey sausage or lean ham
-
1-2 bay leaves
-
¼ - ½ tsp dried thyme
-
1 tsp gumbo file (optional)

32 oz. chicken broth
-
Hot sauce to taste
Directions

In a large pot, combine olive oil, bell pepper, green onions, celery, garlic and chicken. Cook over medium heat until vegetables are tender and chicken is cooked.

Add diced tomatoes and canned tomatoes and chilies

Add chicken broth, sausage or ham, bay leaves, thyme, file and okra. Cover with water.

Bring to a boil and then reduce heat to a simmer, 30-60 minutes, stirring occasionally.

Remove bay leaves when ready to serve.
