  • 1 cup bell pepper, chopped

  • 1 cup green onions, chopped

  • 1 cup celery, chopped

  • 1 tbsp minced garlic

  • 1-2 tbsp olive oil

  • 2 cups okra

  • 1 ½ cups tomatoes and chiles

  • 1 ½ cup diced tomatoes

  • 16 oz diced chicken breast

  • 8 oz lean turkey sausage or lean ham

  • 1-2 bay leaves

  • ¼ - ½ tsp dried thyme

  • 1 tsp gumbo file (optional)

  • 32 oz. chicken broth

  • Hot sauce to taste


  • In a large pot, combine olive oil, bell pepper, green onions, celery, garlic and chicken. Cook over medium heat until vegetables are tender and chicken is cooked.

  •  Add diced tomatoes and canned tomatoes and chilies

  • Add chicken broth, sausage or ham, bay leaves, thyme, file and okra. Cover with water.

  • Bring to a boil and then reduce heat to a simmer, 30-60 minutes, stirring occasionally.

  • Remove bay leaves when ready to serve.
