Heart-y Salad with Rhubarb


  • 1 heart of romaine

  • 1 can heat of palm, drained, rinsed and sliced in half lengthwise

  • 12 cherry tomatoes, sliced lengthwise

  • ½ cucumber sliced thin

  • ½ bell pepper, sliced thin

  • 1 cup rhubarb

  • ¼ cup water

  • 2 tbsp. liquid Stevia

  • 1 tbsp. Apple Cider Vinegar

  • 1 tsp Dijon

  • ¼ cup olive oil


  • Boil rhubarb with water over medium heat 5 minutes. Transfer to blender with water, stevia, ACV, Dijon and oil. Blend until smooth.

  • Use a small heart shaped cookie cutters to cut your cucumbers into hearts.

  • Arrange romaine on a plate, top with sliced heart of palm, cucumber hearts, peppers and halved cherry tomatoes, sliced together to form mini hearts.

  • Drizzle with rhubarb vinaigrette
