Kimchi

Kimchi

Ingredients

  • 1 head Napa cabbage, cored and shredded

  • 6 green onions, chopped

  • 1 Daikon radish, grated

  • 10 red radishes, grated

  • 5 garlic cloves, minced

  • 3 tbsp fresh ginger, grated

  • 2 tbsp sea salt

  • 3 tbsp chili flakes

Directions

  • Place all ingredients in a large bowl. Massage ten minutes and set aside.

  • Massage 10 minutes more until a few tbsp of water have been released.

  • Divide between two 1 liter mason jars and press down, getting rid of air bubbles and bringing liquid to the top.

  • Loosely seal the jar and place in a warm spot. Let sit 4-5 days. Skim off any foam that forms.

  • Seal jar and store in fridge up to 3 months (sealed)

**If on phase 4 add 2 carrots, grated
