Ingredients

1 head Napa cabbage, cored and shredded

6 green onions, chopped

1 Daikon radish, grated

10 red radishes, grated

5 garlic cloves, minced

3 tbsp fresh ginger, grated

2 tbsp sea salt

3 tbsp chili flakes
Directions

Place all ingredients in a large bowl. Massage ten minutes and set aside.

Massage 10 minutes more until a few tbsp of water have been released.

Divide between two 1 liter mason jars and press down, getting rid of air bubbles and bringing liquid to the top.

Loosely seal the jar and place in a warm spot. Let sit 4-5 days. Skim off any foam that forms.

Seal jar and store in fridge up to 3 months (sealed)
**If on phase 4 add 2 carrots, grated
