Lemon Dill Chicken

Lemon Dill Chicken


  • 3 cloves garlic, minced

  • ¼ cup onion, diced

  • 2 tbsp dill, minced

  • 1 tbsp fresh lemon juice

  • 1 cup chicken broth

  • 2 tsp flour

  • 4 boneless, skinless chicken breast

  • Olive oil

  • Salt and pepper

  • 1 cup asparagus, steamed

  • 1 cup Yukon gold potatoes


  • Season chicken breast with salt and pepper.

  • Heat 1 tbsp oil in a large pan over medium heat.

  • Season chicken with salt and pepper. Sear, 3 minutes per side. Remove from pan and place in a baking dish.

  • Add garlic and onion to the pan. Cook, stirring 2 minutes

  • Whisk together dill, lemon juice, broth and starch and add to pan. Cook approximately 3 minutes until thickened. Pour over chicken and bake 10-15 minutes.

  • In a medium pot, boil 2 cups of water. Add the diced potatoes and let cook until tender, approximately 7 minutes. Drain.

  • Mash or whisk with 1-2 tsp olive oil until your preferred consistency is reached.
