Minestrone Style Soup

Minestrone Style Soup


  • 1 lb prosciutto, thinly sliced

  • 1 packet ideal protein pancakes, prepared and thinly sliced

  • 1 cup vegetable bouillon

  • 2 cups celery stalk, sliced

  • 1 cup radish, sliced

  • 2 cups green pepper, sliced

  • 1 cup green onions, sliced

  • 1 cup leek, white part only

  • 2 cloves garlic, crushed

  • 1 tbsp basil

  • 1 bay leaf

  • 2 cups Walden Farms Tomato and Basil Sauce

  • 1 tbsp sea salt

  • 1 tsp pepper


  • Sauté garlic, green onions, celery and leek. Add green pepper. Add Tomato and Basil sauce and vegetable stock. Add 3 cups of water and bay leaf. Cook 25 minutes.

  • Add radish and prosciutto and cook for an additional 10 minutes. Adjust seasoning

  • Add pancakes and basil just before serving.
