Mint Chocolate Brownies

Ingredients

  • ⅓ cup coconut flour

  • ¼ cup cassava flour

  • 1 packet Ideal Complete Chocolate Drink Mix

  • ½ tsp baking soda

  • ¼ tsp salt

  • ¼ tsp cinnamon

  • ½ cup mashed banana

  • ⅓ cup coconut oil, melted

  • 1 tsp apple cider vinegar

  • ¼ tsp Food Grade Peppermint Oil

  • 1 tbsp gelatin

Directions

  • Preheat oven to 350°F. Grease an 8x8 baking tray

  • Whisk together coconut flour, cassava flour, Chocolate Drink Mix, baking soda, salt, and cinnamon.

  • In a separate bowl blend the mashed banana, coconut oil, ACV, and peppermint oil.

  • Combine gelatin with ¼ cup of water and let sit 2-3 minutes. Whisk into wet ingredients.

  •  Add wet ingredients to dry ingredients until just blended. Pour into baking dish.

  • Bake 25-30 minutes until a toothpick inserted in the center comes out clean.
