No Bake Carrot Bites

No Bake Carrot Bites


  • 1 ½ cups grated carrots

  • ½ cup raw almonds

  • ½ cup raw walnuts

  • 1 ½ cups dates, pitted

  • 1 tbsp maple syrup

  • ¾ cups shredded coconut

  • 1 tsp cinnamon

  • ½ tsp ground ginger

  • 1/8 tsp cardamom

  • Pinch of salt.


Optional Icing:

  • 13 ½ oz full fat coconut milk, refrigerated over night and water removed.

  • ½ tsp vanilla

  • 6 drops liquid sweetener (Stevia or honey)


  • Line 12 cupcake tins

  • Grind almonds and walnuts in a food processor to a flour.

  • Add coconut and spices. Pulse 10 seconds.

  • Add carrots, dates and syrup until dates are well chopped

  • Place 2-3 tbsp of mixture into each cupcake tin. Freeze 1 hour

  • Beat coconut milk with vanilla and sweetener until light and fluffy.  Ladle a dollop on each Carrot Bite.
