Pink Radish Soup

Ingredients

2 tbsp extra virgin olive oil, divided

2 green onions, sliced thin and divided

pinch sea salt
-
pinch ground pepper
-
2 cups radishes, sliced
-
1/2 rutabaga, stripes
-
1 beet, peeled and sliced 1/4-inch thick
-
4 sage leaves, preferably fresh

1 quart vegetable broth
Directions

Heat a soup pot over medium heat with olive oil

Add ⅔ of the green onions, salt and pepper. Cook 4 minutes

Add radishes and cook 7-10 minutes

Add beet slices, rutabaga and sage leaves. Stir to combine.

Slowly pour in broth and bring to a boil.

Reduce to a simmer and let cook 20 minutes.

Remove sage leaves and discard. Puree soup in a blender until smooth.

Sauté remaining green onions until golden and crispy for a garnish.
