Roasted Eggplant Dip

Roasted Eggplant Dip


  • 2 cups eggplant

  • 3 tbsp oil

  • ¾ tsp whole cumin seeds

  • 1 small red onion, finely diced

  • ½ tbsp garlic, minced

  • ½ tbsp ginger, minced

  • 2 tomatoes, blended into puree

  • 2 green chilies, minced

  • 2 tbsp cilantro, minced


  • Preheat oven to 350 on broil. Cook eggplant until soft and skin is charred. Let cool, then peel and discard the skin. Lightly mash the flesh.

  • Heat oil on medium heat for 1 minutes. Add cumin seeds. When sizzling, add in the red onion and cook just until softened – do not caramelize

  • Add in ginger and garlic. Cook 2-3 minutes

  • Add in tomatoes and chilies. Cook until a thick, dry sauce forms. Oil will seep oil the edges.

  • Mix in the eggplant and cilantro.
