Roasted Eggplant Dip

Ingredients

2 cups eggplant
-
3 tbsp oil
-
¾ tsp whole cumin seeds
-
1 small red onion, finely diced
-
½ tbsp garlic, minced
-
½ tbsp ginger, minced
-
2 tomatoes, blended into puree
-
2 green chilies, minced
-
2 tbsp cilantro, minced
Directions

Preheat oven to 350 on broil. Cook eggplant until soft and skin is charred. Let cool, then peel and discard the skin. Lightly mash the flesh.

Heat oil on medium heat for 1 minutes. Add cumin seeds. When sizzling, add in the red onion and cook just until softened – do not caramelize
-
Add in ginger and garlic. Cook 2-3 minutes

Add in tomatoes and chilies. Cook until a thick, dry sauce forms. Oil will seep oil the edges.

Mix in the eggplant and cilantro.
