Spinach Quiche

Spinach Quiche

Ingredients

  • ½ cup butter

  • 2 eggs

  • ¼ tsp salt

  • ¾ cup coconut flour

  • 6 eggs

  • 1 ½ cups heavy cream

  • 1 cup diced ham

  • ¼ cup diced red onion

  • ¼ cup spinach, chopped

  • 1 cup shredded cheddar

  • Salt/pepper

Directions

  • Preheat oven to 400°F

  • In a medium bowl, beat the butter, eggs and salt with a fork.

  • Add the coconut flour and mix well until there are no clumps

  • Gather the dough in a ball, then pat into a 9 inch greased pie pan, or individual muffin tins

  • Prick dough with a fork several times

  • Bake 9 minutes. Let cool.

  • In a small pan sauté onions, ham and spinach five minutes.  Put into pie shell and sprinkle with cheddar cheese

  • Beat eggs with cream until well blended. Add salt and pepper.  Pour into shell.

  • Bake 35-45 minutes until set (middle should not jiggle)
