Squash and Garbanzo Bean Curry


  • 1-2 cloves garlic, minced

  • 1 tsp ground ginger

  • 1 tsp ground cumin

  • 1 ½ tsp turmeric

  • ½ cup veggie stock

  • 1 carrot, grated

  • 1 zucchini, grated

  • 7 oz squash, cut into small pieces

  • 1 can chopped tomatoes

  • 1 can garbanzo beans, rinsed

  • 1.8 oz raisins


  • Combine garlic, ginger, spices and a little stock in a large pot over medium heat.

  • Add carrots, zucchini and squash. Stir until well combined

  • Add tomatoes, stick, beans and raisins.

  • Cover and simmer 10 minutes.

  • Add spinach and remove mixture from heat.
