Stuffed Bell Peppers

Stuffed Bell Peppers


•1 lb ground turkey

•1 lb ground beef

•1 tbsp olive oil

•1 large zucchini, diced

•¼ head green cabbage, diced

•4 scallions, chopped fine

•1 cup chicken or beef broth

•6 bell peppers, seeded


•Preheat oven to 350°F

•Heat oil in frying pan. Cook turkey halfway, then add ground beef until fully cooked. Drain fat.

•Add the zucchini, cabbage, scallions, ⅔ chicken or beef broth and season to taste with garlic salt and pepper

•Cut the tops off peppers and remove seeds and membrane.

•Microwave for three minutes on high.

•Fill peppers with meat mixture. Place in an oven safe dish and add the remaining ⅓ cup of broth to the bottom of the dish.

•Bake uncovered for thirty five minutes.
