Superfood Italian Meatballs

Superfood Italian Meatballs


  • ⅔ cup raw chicken liver or heart

  • 1 small onion, roughly chopped

  • 4 cloves garlic

  • 1 lb ground beef

  • 1 cup grated and chopped zucchini

  • 1 tsp sea salt

  • ¼ cup fresh parsley, coarsely chopped

  • ¼ cup fresh basil, coarsely chopped

  • 1 tsp dried thyme


  • Preheat oven to 400°F. Line a baking sheet with parchment paper

  • In a food processor add raw liver or heart, onion, parsley, basil, garlic, thyme and salt. Blend until a puree forms

  • In a large mixing bowl, add liver puree mixture, ground beef and grated zucchini. Mix until blended. 

  • For into meatballs of equal size, approximately 3 tbsp each

  • Bake for approximately 25 minutes or until cooked through in the centre, flipping halfway.
