Sweet Chili Lime Tofu

Ingredients

1 packet extra firm tofu (14 oz.)

3 tbsp Stevia

3 tbsp soy sauce

2 tbsp fresh lime juice

½ lime, zested
-
½ tsp red chili flakes

1 clove garlic, minced

¼ tsp salt

4 mint leaves, sliced thin
Directions

Whisk together all sauce ingredients until Stevia and salt has dissolved. Set aside.

Drain tofu and cut into small thin triangles.

Heat a cast iron skillet over medium heat. When hot, spread tofu in pan in a single layer.

Using a spatula, gently press down the tofu, squeezing out excess liquid. Allow this liquid to boil and dissolve. Continue pressing 5 minutes, then flip tofu and repeat 5 more minutes on the other side.

Pour the sauce in and stir until the tofu is full coated. When the sauce begins to bubble turn off the heat, allowing the sauce to reduce slightly and form a glaze.
