Zucchini Bread Sticks

Zucchini Bread Sticks


  • 1 large zucchini, grated

  • 2 eggs

  • ½ cup Parmesan cheese, grated

  • ¾ cup mozzarella cheese, grated

  • 1 clove garlic, minced

  • 1 tbsp Italian seasoning

  • 1 tsp pepper

  • 1 tsp salt

  • 1 tbsp cornstarch

  • 1 tbsp dried parsley

  • 1 tsp red pepper flakes


  • Preheat oven to 425°F. Line a baking sheet with parchment paper

  • Squeeze excess moisture out of zucchini

  • Combine  zucchini, eggs, Parmesan, ½ cup mozzarella, garlic, Italian seasoning, salt and cornstarch. Spread onto baking sheet.

  • Bake 25 minutes

  • Remove from oven. Sprinkle with ¼ cup mozzarella cheese, parsley and pepper flakes.

  • Bake an additional 5 minutes.
