Zucchini Bread Sticks

Ingredients

1 large zucchini, grated

2 eggs
-
½ cup Parmesan cheese, grated

¾ cup mozzarella cheese, grated

1 clove garlic, minced

1 tbsp Italian seasoning

1 tsp pepper
-
1 tsp salt
-
1 tbsp cornstarch
-
1 tbsp dried parsley
-
1 tsp red pepper flakes
Directions

Preheat oven to 425°F. Line a baking sheet with parchment paper

Squeeze excess moisture out of zucchini
-
Combine zucchini, eggs, Parmesan, ½ cup mozzarella, garlic, Italian seasoning, salt and cornstarch. Spread onto baking sheet.

Bake 25 minutes
-
Remove from oven. Sprinkle with ¼ cup mozzarella cheese, parsley and pepper flakes.

Bake an additional 5 minutes.
