Zucchini Loaf

Ingredients

1 Ideal Protein Butterscotch pudding mix

1 Ideal Protein plain pancake mix

½ tsp cinnamon

1 tsp baking powder

1 tsp sugar free sweetener

⅓ cup liquid egg whites

2 tsp olive oil
-
2 tbsp water
-
⅔ cup zucchini, shredded
Directions

Preheat oven to 350°F

Spray a mini loaf pan with non-stick cooking spray

In a small bowl, microwave zucchini on high for 1 minute. Transfer to a cheese cloth and squeeze out excess moisture.

In a separate bowl, mix the dry ingredients. Add the liquid ingredients and stir to mix.

Fold in the zucchini.

Transfer to the loaf pan and bake 16-19 minutes until a toothpick inserted in the centre comes out clean.
