Zucchini Loaf

Ingredients

  • 1 Ideal Protein Butterscotch pudding mix

  • 1 Ideal Protein plain pancake mix

  • ½ tsp cinnamon

  • 1 tsp baking powder

  • 1 tsp sugar free sweetener

  • ⅓ cup liquid egg whites

  • 2 tsp olive oil

  • 2 tbsp water

  • ⅔ cup zucchini, shredded

Directions

  • Preheat oven to 350°F

  • Spray a mini loaf pan with non-stick cooking spray

  • In a small bowl, microwave zucchini on high for 1 minute. Transfer to a cheese cloth and squeeze out excess moisture.

  • In a separate bowl, mix the dry ingredients. Add the liquid ingredients and stir to mix.

  • Fold in the zucchini.

  • Transfer to the loaf pan and bake 16-19 minutes until a toothpick inserted in the centre comes out clean.
